Calendar Description:
This course examines methods of sound health, safety, and nutrition practice in Human Services and Education settings that involve caring for and educating children. Particular attention is given to the promotion and modelling of a healthy, safe environment through management and prevention. This course will encourage reflection of personal health, safety, and nutritional issues as they apply to Early Childhood Educators.

Learning Outcomes:
  • Upon successful completion of this course, students will be able to demonstrate their knowledge, skills, abilities, and attitudes of personal wellness and sound health, safety, and nutrition practices withchildren birth to 6 years of age.

  • Define the holistic concept of health and ways to maximize health potential
  • Describe factors in illness prevention and management
  • Plan, implement, and evaluate health, safety, and nutrition policies, and healthy food policy and practice

  • Participation will be based on online group participation (20%). Students are required to participate on the d2l discussion board on a weekly basis.
Writing Assignments:
  • Students will complete 1 mandatory Participation and Collaboration assignment (20%) and choose 4 others, each worth 20%, to equal 80%.
  • Choices include: Infection Control Checklist, Staff and Family Policy, Meal/Snack Observation or Menu Planning, Workshop Preparation, Research Paper, Equipment Design, Playground Awareness, Prevention of Child Abuse and Neglect.

  • Students must be working or volunteering in an ECE or school setting in order to complete the required assignments.
  • Assignments: Late assignments or projects will only be accepted at the discretion of the Instructor. If there is a documented medical reason or extenuating circumstance, it is the responsibility of the student to inform the Instructor immediately. In these situations, missed work may be completed or prorated.
  • Ethics: NLC assumes that all students attending the institution will follow a high standard of ethical behavior. Incidents of cheating, plagiarism, or unethical conduct may, therefore, result in a grade of zero for the assignment or project for all parties involved and/or expulsion from the course.
